The animals graze our fields from May to November. In winter, they are housed to protect the land, and are fed clamp silage (cut grass stored under cover and allowed to ferment), harvested on the farm in early summer.

Cooking Instructions

Start by seasoning your rolled rib of beef generously with sea salt, cracked black pepper, and a rub of mustard or garlic and rosemary for extra depth. Sear it in a hot pan until the outside is caramelised and golden, locking in all those rich, beefy juices. Roast in a preheated oven at 220°C (425°F) for 20 minutes to crisp the fat, then lower to 160°C (320°F) and cook to your preferred doneness. As it roasts, the marbled fat bastes the meat from within, creating tender, juicy slices bursting with flavour. Rest well, carve thick, and serve with horseradish and rich pan gravy.
